Summer is here, hurray hurray. At the weekend it is supposed to get so super hot that I decided to rather postpone my Kohlrabi Leaf Soup recipe to the next rainy period and instead I am sticking to watermelon a little longer.
It is summer. We are going to sweat. And we are going to need plenty of fluids. A fantastic hot-summer-day-dish is the most delicious watermelon mint and feta salad. Only recently I came across this combination and my first thought was: exciting, interesting, weird. What can I expect here? Sweet melon with feta? Hm … Well, I have tried it and was thrilled. Not only is it very easy to prepare, but also it tastes fantastic and with its freshness it’s perfectly suited for hot summer days. In addition this salad can be taken to the office quite easily, completely prepared. Unlike traditional salads, water melon keeps nice and fresh pretty much all day, considering its kept in the fridge.
However with its approximately 45% fat content feta isn’t necessarily a low-calorie food, but nevertheless it is healthy. Feta supplies our bodies with high quality protein and contains essential nutrients such as vitamins A and B, calcium, potassium and magnesium, which are important to our bones, teeth and nerves. Plus feta boosts pretty much every dish with its delicious flavour. And in return the fats are useful to us to stay saturated for much longer.
So that’s what you need:
- 1/4 watermelon
- 1 hand full of fresh peppermint
- 1/2 feta
- some oil and lemon
That’s how it’s done:
Remove the watermelon from its shell and cut it in small pieces. Then add the chopped mint leaves and crumble the feta over melon and mint Mix everything and add a little oil and lemon. i personally also prefer some freshly ground pepper. The amount was enough for a light dinner and my lunch in the office next day.
