Lunch-Box: Wild Garlic Pesto Pasta Salad

Finally, it is wild garlic season. Since I don’t live in the countryside, I don’t have the opportunity of picking fresh wild garlic in the forest, but thankfully my weekly farmer’s market reminded me of the wild garlic season. Wild Garlic does not only tastes very similar to garlic, it also has similar effects to our health, just a lot more intense. A true Superherb and according to the myths it is also supposed to keep out vampires and has some aphrodisiac effects.

And apart from that wild Garlic stimulates digestion and has cleansing abilities. Its perfect for spring cleansing and to bring digestion and metabolism back on track. At the same time it contains a lot more vitamin A, C, E and selenium then garlic. Just like garlic it seems to have a positive effect on our blood cholesterol. It helps protecting blood vessels from clocking up and helps improving our overall blood flow.

The taste of wild garlic is very similar to normal garlic. But it doesn’t come with any nasty smell after eating. So you can prepare quite few tasty dishes, without the fear of smelling. Especially easy to make is the wild garlic pesto. In fact it’s ideal for an easy office lunchbox. Unlike with original pesto, I have used feta cheese instead of parmesan cheese. The taste of feta goes really well with the wild garlic. And that’s how you make your own Wild Garlic Pesto:

Ingredients
  1. 1 bunch wild garlic
  2. 1 handful of pine seeds and almonds
  3. 1/4 pack of feta cheese
  4. some Chili
  5. some olive oil
  6. salt, pepper
  7. 1 dash of lemon

Instructions
  1. First, wash and cut your wild garlic into chunks and shred it along with the feta, some chili and oil.
  2. Once the wild garlic has reached your preferred consistency mix in the pre-shredded pine and almond pieces and season with salt, pepper and lemon. Add as much oil as you need to reach your preferred consistency.

Now you have got a delicious base for your lunch snack. All you need now is some cooked pasta to mix in your pesto with. Season it accordingly and perhaps add a sliced tomato. You’re done with your Lunch Snack: Wild Garlic Pesto Pasta Salad, which you can enjoy hot or chilled: voila!
