Recently, I had travelled with the family to spend a weekend together. The accommodation was quite a relic from old GDR times, but to my surprise the buffet was surprisingly delicious. Among many things they offered waffles for breakfast. And since I was on holiday, i thought why not. So i indulged in waffles quite every morning. But too bad, that waffles aren’t made for daily consumption, at least our hips might think so.
But why not? Why not having waffles every day without feeling the guilt of eating too many bad carbs? So I looked into some healthy alternatives to the classic waffle recipe that includes white flour and butter. And surprisingly there are plenty of alternatives. There is one particular recipe that I found at Chefkoch.de, that I was really impressed about. It is very simple and you only need very few ingredients. And for sure you wont use any flour or butter, but instead will use oatmeal, ground almonds and bananas.
These ingredients are particularly healthy, which i am sure is an obvious fact. But just to refresh memory, oat meal is a perfect local Superfood that gives you all the energy you need in the morning, as well as plenty of valuable minerals, such as calcium, iron, manganese, magnesium, silicon, zinc, vitamin B. Especially magnesium and vitamin B are important to soothe the nerves during stressful days. Regularly eaten oatmeal helps against bad mood, it has a balancing effect and increases our performance levels. But even bananas have something to add here. They are able to stimulate our happiness hormone production in our brain.
Another good thing about this recipe is, that the waffle dough can also be prepared ahead, so you wont have to stress in the morning. Bingo.
And this is how you make your own healthy waffles:
- 3 heaping tbsp ground almonds
- 3 heaping tbsp oatmeal
- 2 heaping tbsp coconut flakes
- 1 Egg
- 4 tbsp milk
- 1 ripe banana
- Mash the banana with a fork and whisk all remaining ingredients until smooth.
- Add more milk in case the dough is too thick.
- The dough should be enough for two thick waffles.
- In case you do not like nuts or coconut flakes, than just replace these ingredients and use some more oatmeal instead.
